Overview
LIMA is a representation of the gastronomic expansion that has taken place in Peru during the last few years, with the idea of showcasing Lima to London, as the gastronomic capital of the Americas.
Sustainability is integral for us. While sourcing the majority of our ingredients from the British Isles, we will also showcase Peru’s vast biodiversity by bringing some unique organic and wild produce from small growers based in Peru, specifically from the Andes and the Amazon.
LIMA is the creation of world-renowed Peruvian chef, Virgilio Martinez and his partners, the Gonzalez brothers. Bunmi Okolosi heads up the front-of-house and Robert Ortiz, Virgilio’s longtime friend, runs the kitchen.
Virgilio and his team will establish a strong connection between his base and foundation: Central Restaurante, and LIMA in London. This constant communication will keep LIMA in London vibrant, relevant and always at the forefront of innovation, showcasing Virgilio’s most recent creations.
