Italian Charcuterie

The Basque Salami stall at Borough is very popular and for a long time the proprietors have been searching for good charcuterie from Italy. In August 2008 they visited a farm in the northern Italian region of Emilia Romagna: in the hills inland from Rimini, Matteo and Fausto Zavoli breed pigs that spend their lives in the beech woods on their land. The Zavoli brothers represent a new generation of Italian breeder/ producer that is eschewing modern production methods in pursuit of quality and tradition. The charcuterie the brothers make from these pigs is fabulous. Salami, prosciutto, lardo, pancetta, coppa and spalla.
