Overseen by chef Alberto Hernandez, who trained under the infamous Ferran Adria at the three Michelin starred El Bulli, Aqua Nueva presents its guests with an opportunity to indulge in the exciting and ever changing Spanish city dining scene without ever leaving British shores. In the kitchen, Hernandez’s team creates dishes epitomising Spanish cuisine, both tapas and a la carte, but with a focus on creativity, experimentation and, of course, well sourced, fresh and authentic ingredients. The stunning ‘Liquid Cashmere’ menu meanwhile is a unique combination of Spanish and Japanese flavours in hot handheld bowls.
