Renato Sommella, chef and co-founder of Piada, has brought the Italian idea of lunch to London, showing quality needn’t be sacrificed for speed. The concept is very simple. Piadine – the original street food from Italy – are made on site every morning with olive oil and flour and then cooked to order on specially designed griddles in front of the customer. The flatbreads are filled with fresh Italian ingredients such as bresaola, prosciutto, stracchino and fontina. Every Tuesday there is a delivery of buffalo mozzarella which Piada serves both in the piadine and with the pasta and salad specials which change daily.
